Chocolate Pistachio Cookies

Ingredients:
- 240g flour (or 200g flour)
- 20g Unicorn Superfoods Chocolate Plant Protein Powder
- 40g cocoa powder
- 1 tsp baking powder
- 150g granulated sugar
- 1 pkg vanilla sugar
- 1 egg or egg substitute (1 tbsp linseed flour + 3 tbsp water)
- 220g soft butter
Topping:
- 100g pistachios
Filling:
- Pistachio cream (100% pistachios)
Method:
- Mix the butter and sugar until fluffy, then add the egg or substitute.
- Sift the dry ingredients and fold them into the mixture. Chill the dough in cling film.
- Preheat the oven to 180°C (top and bottom heat).
- Shape the dough into 2 cm balls, roll one side in chopped pistachios, and press a hollow in the center.
- Bake for 10 minutes, let cool, then fill with pistachio cream. Enjoy!
