Rainbow Coconut Easter Eggs
Try this guilt free easter egg recipe. Dairy free, gluten free and refined sugar free!
Ingredients for filling:
- 1/2 cup dessicated coconut
- 1/2 cup shredded coconut
- 2/3 cup coconut flour
- 1 teaspoonof vanilla
- 1/4 maple syrup
- 1/2 nut milk
- Blue Spirulina, Pink Pitaya and Black Goji Berry powder
Ingredients for chocolate coating:
- 3/4 cacao powder
- 1/2 coconut oil
- 1/4 maple syrup
- Vanilla
Method:
- Process ingredients for filling together to form dough like mixture. Separate into 3 bowls to add in colouring. Roll balls of mixture into egg shape and freeze for 1/2 hr
- Mix chocolate coating ingredients together to make dip for eggs. Allow chocolate to set
- Dip each egg a few times in the chocolate coating to ensure each egg is fully covered
- Place eggs in the freezer for 3-4 hours to set
