Rainbow Pancakes

Impress your family and friends (or yourself 😜) with these healthy and easy Rainbow Pancakes!

Ingredients (+-10 medium pancakes):
- 270 ml unsweetened almond milk
- 1+1/2 tbsp apple cider vinegar
- 230 g all purpose flour
- 10 g baking powder
- 2+1/2 tbsp unrefined cane sugar
- 1 tsp vanilla extract
- a pinch of salt
- 1 + 1/2 tsp Unicorn Superfoods Beetroot Powder
- 1 + 1/2 tsp Unicorn Superfoods Immunity Blend
- 1 + 1/2 tsp Unicorn Superfoods Matcha Powder
- 1 + 1/2 tsp Unicorn Superfoods Blue Spirulina
- 1 + 1/2 tsp Unicorn Superfoods Black Goji Berry Powder

Recipe
1. In a small bowl mix milk and vinegar
2. Let the mixture sit for 5 minutes, until you prepare the other ingredients
3. In a large bowl mix flour, salt, baking powder and sugar. Add in the vanilla and the milk-vinegar mixture. Whisk just enough to incorporate all the ingredients
4. Divide the batter between 5 small bowls and add colouring powders to each of the bowls. ❤

❤️ for the red pancakes add Beetroot powder (about 1+1/2 tsp)

🧡 for the orange ones add Immunity & Beetroot powder (as much as you need from both to achieve the desired shade of orange)

💚 for the green pancakes add some Matcha powder (about 1 or 1+1/2 tsp)

💙 add Blue Spirulina powder to the batter to make the blue pancakes (21+1/2 tsp or so)

💜 for the purple ones add some Black Goji Berry powder to the batter (about 2 tsp)

5. Heat up a nonstick pan and start cooking your pancakes for about 1 minute or so per side (on low heat). If needed, brush the pan with some vegetable or coconut oil after each pancake.

Enjoy! 💕
