Chocolate, mixed nut & cranberry muffins
These Christmas inspired muffins are the perfect festive snack! With added protein using our chocolate fudge protein powder, you will have a delicious and wholesome treat!

- 200g self raising flour
- 10g cocoa powder
- 40g chocolate fudge plant protein
- 220g caster sugar
- 1 tsp baking powder
- 120g vegan butter
- 145ml oat milk (or other dairy free milk)
- 1 flax egg (1 tbsp flaxseeds + 3 tbsp water)
- 100g vegan chocolate
- Handful of walnuts
- Handful of pecans
- Handful of dried cranberries
Method:
- Preheat the oven to 180C and line a muffin tin with 12 cases.
- Add the self raising flour, cocoa powder, protein powder, caster sugar and baking powder to a bowl and whisk until smooth.
- Add the vegan butter to a saucepan and place on low heat until the butter has melted. Pour in the oat milk and mix to combine.
- Pour the wet mixture into the dry ingredients along with the flax egg and mix until completely combined and smooth.
- Chop the vegan chocolate, walnuts and pecans into small pieces and fold into the mixture, as well as the dried cranberries.
- Divide the mixture between the 12 cases and bake for 25 minutes.
