Banana Muffins with Blue Frosting
The perfect treat to make for the whole fam and slip in nutrients into the kids food.
Ingredients:
Muffins:
- 2 ripe bananas
- 2 handfuls of blueberries
- 3 tablespoons of coconut oil
- 50g of buckwheat flour and 50g coconut flour
- 1 teaspoon of baking soda
- A good drizzle of agave nectar and some cinnamon
Frosting:
- 1 banana
- 3 tbsp Coconut yoghurt
- 2 tsp of Coconut flour
- 2 teaspoons of Blue Spirulina
Directions:
- Preheat your oven to 165 degrees
- Add all ingredients together in a bowl and mix until smooth
- Distribute the mix evenly into a muffin tray and place in the oven for approximately 20-25 min
- Add the frosting ingredients into a bowl and then blend or whisk the ingredients until fluffy
- Once the banana muffins are set add the frosting and decorate
