Tropical Baked Doughnuts
Treat yourself this summer with these delicious tropical doughnuts made with Unicorn Superfoods Tropicana Superfood Blend! 🌴🍩
Ingredients:
- 125g plain flour
- 100g caster sugar
- 1 tsp baking powder
- 10g Unicorn Superfoods Tropicana Blend
- 100ml oat milk
- 1 tbsp butter
- 1 flax egg (1 tbsp flaxseed + 3 tbsp water)
- 1 tsp vanilla extract
- 100g white chocolate chips
Method:
- Preheat the oven to 180°C and spray a doughnut tin with cooking spray.
- In a bowl, combine the flour, sugar, baking powder, and Tropicana Blend.
- Melt the butter in the microwave for 25 seconds, then pour it into the dry ingredients along with the oat milk, flax egg, and vanilla extract.
- Whisk until the mixture is smooth, then fold in 50g of the white chocolate chips. Divide the mixture evenly into the doughnut tin (makes 9 doughnuts).
- Bake for 15 minutes or until slightly golden.
- Let the doughnuts cool in the tin for a few minutes before transferring them to a cooling rack.
- Melt the remaining chocolate chips in the microwave in 25-second intervals, stirring in between until fully melted. Drizzle the melted chocolate over the doughnuts and enjoy!
